I tried to change the settings by organic2's method but it doesn't work for me. It is that I'm not able to change the mode to "GSM only" on my phone. It switches always back to "auto" mode. So I cannot test if it would be reboot safe or not.
You could do a nandroid backup before changing anything and then use my method which is safe, works is more flexible in case of which frequencies to use
and it should be reboot safe
I played with all those settings within this menu many many times without damaging anything. The best way is to do the mentioned change and then reboot so you will be sure that all goes well.
If something goes wrong you would have a nandroid backup and so can easy go back to the current state if needed. The settings you make within the service menu is written to the /data partition so if you restore a nandroid backup you will have your settings back before the change.
(as the above settings are NOT reboot safe you don't need this)
