Just checking your gpsconf, as I'm UK would it be worth me commenting out the other servers and changing the first to UK?

It doesn't matter. Basically, if the first pool's DNS is dead, it will go to the next. So in theory having them there is good for redundancy. But, if the entire domain NTP.ORG stops resolving, we're SOL.
Honestly, the NTP packet is so minuscule that you don't need to have a UK pool versus the global pools I use up top. It may matter only if your phone's internal clock is extremely off OR you have a very slow data connection.
V3.x will have some surprises. It may involve my own NTP servers or pools. It may involve a lot more than that, too.
