Well I ordered an htc one m8 on ebay today to replace my galaxy s4. I wanted to put GPE rom on it when it comes in, will I be able to install Htc's apps from play store then? Like the camera app so I can use the duo camera? Rom is in this thread: http://xdaforums.com/showthread.php?t=2706441 Also will I be able to receive ota updates from google then? If I perform nandroid backup, does that backup my stock htc rom or not? Kind of noob at this, only device I really meddled with was nook hd+.

you will be using stock google camera, not htcs. but you will have htc photo edit app.
you will get updates from google if you convert to gpe.
if you backup when you get phone it will be stock, but if you convert it will wipe all data and you need a certain procedure to go back to sense. please read before converting

edit. that rom you linked is good if you dont wanna convert. no google updates though

if you are new to htc, please read the guides. i see too many "brick" issues that are preventable

You have a link to a rom that has google updates? What do you mean by converting? I was talking about these apps: http://www.androidcentral.com/htc-sense-6-apps-hit-google-play-ahead-new-htc-one-launch
Is there a way to make stock firmware look like stock besides installing different launcher? Like make software buttons look like stock, and notification and settings panel? Can xpose do this?

blinkfeed comes with sense, which is stock htc. google edition is stock google which i consider stock. xposed has alot of options tp change the look. i would just browse around the forum and read, checkout screenshots and see what you like
