From my experience as a user only, not a developer:
Gingerbread is going to be arguably the most stable, although I would run into strange issues with the keyboard disappearing and nonsense like that. It's not actively developed currently since everyone is into JB ROMs at the moment so there's that. It's also not as aesthetically pleasing as JellyBean in my opinion.
- Most current GB ROM. Desirable over other GB ROMs because it's inclusion of the Synthesis Kernel by Zen Arcade
which fixes a few notable GB bugs like Wifi drain.
- I got tired of the look and feel of this ROM pretty quick and decided to flash an old GB ROM (You can find a list here
and there's a post somewhere with better organization) and manually flash the Synthesis kernel which is pretty straightforward.
If you want to stick with JB, they all have similar issues. It really depends on what matters to you.
- Unofficial CM10.2
is fairly stable in my experience. Issues I've had with it always seem to go back to improper flash with Odin or just that my power button is on it's way out.
- I can't speak to the day to day stability as I've just flashed it last night, but I may like this one the best out of the currently available ROMs for our Infuse. The resolution is what does it for me, so much detail. It's also hasn't been updated to 4.3 yet, but that's not necessarily a bad thing.
- Never tried this one, but the sell seems to be good battery life on a JB ROM. I can't get passed the MIUI look myself.
