Stock ROM, I assume? Personally I don't use it, but if I did, the first things to go would be anything from AT&T. I don't use the email apps so I would get rid of those including Exchange app. I would then make a nandroid and then remove anything else that I didn't want/use one by one, rebooting in between each to see if the phone will still function correctly without. Then if there's problems you could just restore the nandroid with a lesson learned.
That being said, in ICS, you can disable many of the system apps in Settings->Apps->All. Just select the app you don't want and when the App Info page comes up, just select the Disable option.
You don't want to approach this haphazardly if you don't know what you're doing. Though I've never heard of someone bricking their phone by debloating their device but it can cause problems if you're not careful. Trial and error is a great teacher if you pay attention to how removing the apps affects the phone. A lot of them have no effect on the basic functions of the phone.
