Never got an answer from anyone, so here's what I did. Brushed up on my TF201 reading here at XDA while I waited for the device to get here.

Got the device today in the mail...
Shipped with JR03C.US_epad-10.4.2.15-20120917 stock jellybean, so as far as I can tell, NVflash is out of the question. The bootloader has already been updated, and the jellybean update patches the NVflash exploit altogether. That sucks, but what can you do? (Is a jellybean to ice cream sandwich bootloader downgrade possible??) Too bad, so sad. :/
On to unlocking the bootloader...
Downloaded ASUS Unlock Tool APK, shrugged off the "ICS ONLY" text ASUS has written in the file description. Unlocked bootloader after installing APK and verifying Google account over WiFi.
Flashed TWRP via ADB...
Downloaded TWRP 220.127.116.11 blob from the TWRP site. Put device to ADB mode.
fastboot -i 0x0b05 flash recovery twrp 18.104.22.168.blob
Successfully flashed recovery. Reboot to recovery.
Installed Superuser from TWRP...
I used my card reader to copy the Superuser zip to my microsd card [usb storage won't mount while in recovery?], put the card in the tablet, loaded up TWRP, flashed the zip. Rebooted. Root access verified.
UNLOCKED, RECOVERY, ROOTED. Bring on the ROMS!
After reading up on CM 10.1, CM 10.2, and a few other options, I've decided to go with AndroWook HairyBean 2.31.
***IF ANYONE IS FOLLOWING THIS POST, READ THE ROM THREAD CAREFULLY***
YOU CAN BRICK IF YOU FLASH WITH AN INCOMPATIBLE RECOVERY/BOOTLOADER! USE THE RECOVERY AND BOOTLOADER UPGRADE ZIP IN THE THREAD! DO NOT INSTALL TWRP FROM THE TWRP DEVS.
Copied the HairyBean Bootloader/TWRP upgrade zip and the ROM (both links in the thread) to external SD.
Booted into TWRP (2.6.1 that I flashed earlier) flashed the zip to upgrade the bootloader, and install the HairyBean custom TWRP.
Reboot to apply the new bootloader. Wait till the blue bar is full, it should reboot on its own into the new Hairy TWRP recovery.
Completely wiped the device. System, dalvik cache, cache, data (I had a new tablet, so I didn't care about wiping pictures, music, etc)
Started the HairyBean installer. Follow the Aroma installer prompts. When complete, reboot the device into the new ROM.
Woohoo! A lot has changed in the last half a year. Anxiously hoping NVflash makes its way to the jellyban bootloaders. This device shipped with the update applied, so no NV love for me (yet?)
