In HTC One we do not have the many sensors of the samsung galxy S4 (not useful in my opinion). If you switch off the sensors in the galaxy S4 yes you get extra time on your battery, but in HTC One we have Accelerometer, gyroscope, digital compass, proximity sensor, ambient light sensor and from what i know each one of them is not always on except when an application needs them.
If you really want to shut any sensor off then it will be the Ambient light sensor, just switch the brightness of your screen from auto to whatever permanent screen brightness you want.
IF anything is wrong please do correct me.
