But the root method loads the OS when I try to use recovery. Is there any other way to reset the phone in case my modifications fail and I won't be able to load the OS anymore?

fastboot flash system system.img
fastboot flash boot boot.img
If that doesn't work (I got an error trying to fastboot the system) you can use RSDLite and the SBF file to reflash the entire stock image...
The RSDLite method worked like a charm after I edited the XML like the tutorial says
