No I can't tell you. Its a judgement call, and a decision for you to make.
I personally prefer S-Off, since S-On means you have the extra step of manually flashing boot.img every time you flash a ROM, which is inconvenient. Plus, with S-Off you can flash radios.
But S-Off means downgrading hboot. Which is extra work, and not sure how foolproof of a process that is (I never had to do it, so I can't comment much on it).
Plus, it was not a choice for me. I did S-Off before HTC offered an official bootloader unlock for the Flyer.
