i have HTC One with storage of 32 GB (believe me for me its optimal). i can dedicate good 5 GB for Mail box if there is way to move or copy mails from server to phone.
Well, Exchange will still have all the new emails that get sent to you anyway, while you are on Holiday...since all new ones that come in still are held locally on the Exchange server and then synced to your phone using ActiveSync, unless you have a setup that's, well...let me call it less common.
Why not archive all your emails at the server itself to give you more storage space in Exchange and mitigate the risk of running out of space that way? Or ask your company for a temporary increase while you are on Holiday since it would seem to be in their best interest to not have them bounce...
One of those 2 methods seem a bit more strategic to me. To move those emails, you'd usually have to have POP3 access to Exchange and then choose to download all messages and then delete from the server, which again, is less common.
