They both need to be connected to the same WiFi router as far as I know. There needs to be at least a 'network', but it does not need to be connected to the internet.

Yes, word processing and spreadsheets should print fine.

If you look at the apps in the OP, most of them list the supported printers in the Play Store description. You can browse through those and find the smallest or best fit for your requirements.
