I have a GT-N7100, it is UK and unlocked.
The version *#1234# gives
AP: N7100XXDMC3
CP: N7100XXDLK7
CSC: N7100OJVDMC1
and this firmware is not on SamMobile.

I want to try CyanogenMod and return to stock, and I believe the only way to return to stock is to flash the stock firmware. As I can not find my stock firmware but my phone is still stock, is there any way I can extract the firmware from my phone before I update?
or make some kind of full and complete backup for me to restore?

If it is rooted, you could flash a new recovery ie TWRP, or Philz, which you can use to create backups, just be sure to tick all the boxes of what you want to backup. And if you're not happy with CM, you can restore the backup. I believe that you can flash the stock recovery through Odin, but I have never needed to, so I'm not 100% sure. If you have anymore questions don't be afraid to ask, I just might not know the answer :p.
