You can replace the system.ext2 but if it doesn't boot or goes into boot loop you need to delete data.img which would mean going through the whole process again.
Samsung Galaxy S2 i9100
All sorts of ROMs depending on the day of the week

The two what?

FRX05 <-> FRX06: newer build
no boot <-> boot loop: no flying androids <-> flying androids forever
old data.img <-> delete data.img: keep all apps and settings <-> loose all apps and settings

So yeah, you can
- just replace the system.ext2 with the new one, or
- if it won't boot delete data.img and try again, or
- just download the new full bundle and start from scratch on a fresh sd-card.
BTW this also works for GBX0A, but then i would swap the conf file as well (in the conf folder)
