I recommend CM7 if you don't want/like sense.

Else Leedroid v2.4.1 for the best stable rom closest to stock.

I wouldn't recommend the new sense roms as I find them slow/buggy.

Insertcoin, leedroid and rcmixs are very good sense-roms.
Cyanogenmod 7 (CM7), miui, oxygen and redux are very good non-sense-roms.
