Email Signature Question

I had to change my signature for my standard GMail account. I initially went to my Inbox, then Settings for my Gmail account. Made the change in "Signature". From the Gmail app I created a message and the proper signature was added. However, when I went to my contacts and tried to create an email, my old signature appeared. I then went to Email and looked at the settings and found that there was a totally different (the old) signature. Can someone explain why there are two settings? It looks to me like creating an email from the Gmail app or creating one from the Email app uses the same account. Have I somehow created two identical accounts? Very confused!
