[Q] gapps not responding, please help

Hey,
I made a mees with my defy since i upgraded to 2.3, and then tried downgrading using Zephytor's beginners guide.

at first, it worked, but then Gapps started not responding at all.

for example when hitting settings->accounts, it says: "the application settings (process com.android.settings) has stopped unexpectedly. please try again"

so i started over with the full SBF in the tutorial - which is Eclair but V5 (wiping data, cache, dalvik before)
and even with this rom, gapps is not reposnding...

i've been searching for threads on this issue, but all i could find was "do factory reset", which i did, and it didn't help...

i'm guessing downgrading is still problematic in some ways.
can you please help me try to find the right SBF - it doesnt have to be 2.2, i dont mind the fact that i can never go back (and have no warrenty).

do you know of a good SBF that will work with MIUI/CM7?
