The HTC stock gallery application is slow, and doesn't refresh its view until the phone reboots, I've had this problem since forever with the stock gallery application.
Your two solutions, either download a different gallery application (QuickPic comes to mind), or deal with it.
HTC Desire → HTC Desire S (Bricked) → Samsung Galaxy Nexus

For question no 2, the solution is to go to settings>About Phone>Tell HTC and turn off both the check boxes.

Beamed from far far away using xda premium.

DONATE TO ME
For refreshing the stock gallery without a reboot, use an app called sdrescan. Also, doesn't your ROM have native screen shot by holding power and pressing 'home' key?

I've found the screenshot feature has never worked for me, but that's probably because of the modifications I have made.

ShootMe although a native screenshot application does do screen capturing as well.

Never figured out which ROM you are on. Any clues??

The native screenshot option works perfectly on all Sense 3 and Sense 3.5 ROMs i've ever tried...even with a ****load of customization! Dunno about the other ROMs though.

It works, but its tricky to get used to ..

Hold the power button, then immediately hit home...

Took me a while to figure out, its not quite as simple as the iPhone version
Samsung Galaxy S2 Stock XWLSS
Samsung Galaxy Tab CyanogenMod 10.1
HTC Desire S Andromadus

Thanks!
