You can easily delete a lot of apps like

BuddiesNow.apk
CertInstaller.apk
Dlna.apk
DualClock.apk
FactoryTest.apk
InfoAlarm.apk
Layar-samsung.apk
MyFiles.apk
PicoTts.apk
SamsungApps.apk
SamsungWidget_CalendarClock.apk
SamsungWidget_FeedAndUpdate.apk
SamsungWidget_StockClock.apk
SamsungWidget_WeatherClock.apk
Street.apk
Swype.apk (Unless You Want This)
thinkdroid.apk
TouchWizCalculator.apk (Unless You Want This)
TtsService.apk (Unless You Want Text To Speech)
TwWallpaperChooser.apk (Unless You Want the TouchWiz Wallpapers)
VoiceDialer.apk (Unless You Want Voice Dial)
WriteandGo.apk

If your ROM is not de-odexed then you should have to delete corresponding odex files also.
