What if I don't want neither the ICS Theme boot animation nor the ROCKET ROM one?
What do I have to edit/remove to get the stock animation back?

Just replace /system/media/bootanimation.zip and set permissions. Or delete this file for stock-animation (not tested, but should work).

Or You can download another boot animation if you want to change it.
To have original Samsung one follow Elk2210 advice.
