You don't. Once it's flashed, it is the new version unless you reflash the old one, I believe.

I think he means how to choose between booting WebOS vs Android (?). I was wondering the same thing actually, before I try this out.

Basically what it does is put a nicer background onto the screen. The selection process is still the same, with the volume keys to choose which OS to boot into. It is still in the center of the screen. Took a screenshot of mine.
