I'm currently on 5.0.2.7 CWM...

and I'm currently running Task's 14 HC ROM...can I still use my current recovery or do I need to flash the newer recovery to get this ICS rom running on my tab?

You need to flash pershoots latest recovery (http://droidbasement.com/galaxy/roms/cm9/p4wifi/), otherwise the install will fail.

Thanks man, I thought so...but just needed to be sure, ya know.

My other question is...

Once I flash this ROM or any other ICS ROM for my Tab, can I restore a nandroid backup that I had done prior to flashing this ROM?

I am currently running Task's 14 HoneyComb build. Is it safe to restore a HoneyComb ROM after flashing an ICS ROM?
Safe to use pershoot's latest recovery to this method?

Yes, pershoots recovery works fine with backups from older 5.x CWM versions.
