No, you can not uninstall a zip file. All that the recovery does is to unpack it into the root folder (and overwrites existing files there). You only need the recovery for this unpacking for two reasons:
1.) For security reasons some filesystems are mounted as read-only while the normal operation (on rooted android systems that are don't have the "production-build-flag" set to true you can remount everything to read-write mode)
2.) Some system files are always in use when you have booted android, you can not delete/overwrite them in normal operation.

For the chinese stock ROM I believe this is true. Why do you want to root and unroot your device? as far as I know you don't need root permissions for flashing the gapps package and enable them by dialing *147258369#
