I have installed GingerDX on my X8, with xRecovery. When I installed the new ROM I noticed that it also installed CVM, and replaced it with xRecovery that was already there. The problem is I backed up all my files with xRecovery. So my question is, how can I find that backup since my xRecovery has been replaced with CVM?

And one more question, can have flash player on my X8, now that it has been updated to gingerbread 2.3.7?

To do this, you need to select Backup and restore on CWM and you will see four options.Backup,Restore,Restore from xRecovery,Advance Restore.Select the one I highlighted which is the 3rd one on the picture down below.Select it and you'll see the backup files.Hope this helps.

Use Set CPU or ROM Toolbox(I more recommended using ROM Toolbox as it was free in the Market.Example is at the attachment.
