The S3 will be my first Android phone ('89 Nokia bagphone ... N95, N8) but I've re-purposed the Nook Color and domesticated an HTC Flyer so I'm pretty versed on hacking in/onto Android.

If you really, *really* want to build, pick up a Nook Color on eBay or at a pawn shop. Find the thread where Fattire teaches the community how to a) setup a build environment in Win/Lin/Mac, b) pull CM9 and Encore (Nook Color) source from github and c) build/ebug your very own ROM.
Want to make some changes? Replace some files ... edit some ... create some. Launch Terminal. From build directory type 'make lunch' and go make a cuppa.
I suggest the Nook only because it has an unlocked bootloader. It is virtually impossible to brick. It works reasonbly well with CM9 (ICS) albeit it still lacks HW Accel drivers for the TI gfx chipset (we're looking at *you* B&N!) and has a crippled bluetooth radio. Those things aside, it was my first intro to Android from the days of Froyo and is still my mainstay for testing *anything* Android.
