Also changed the boot animation, I couldn't stand that Verizon one.
Its rooted and has busybox installed.
It should be noted, that these do not flash a kernel. When we get access to our boot partition, you'll need to flash a stock boot.img if you came from an AOSP-based rom. (Stock boot.img flashable via odin here (flash in PDA slot):

The only question I have and didn't see in the OP was this:
According to Chainfire, there is a process that Samsung silently uses to check for root. This process is called com.sec.android.app.sysscope

There are a few things on the list of apk's that I'd want to keep. Would it be safe for me to delete the ones on your list in Root Explorer though?
Also I swapped out the messaging app to CM9 version and email app to stock ICS already. Hated the Touchwiz versions.
