icons in cm7 themes??

I am currently using this rom "http://forum.xda-developers.com/showthread.php?t=1697912"....but when i change themes using theme chooser..it doesnt change the icons..is it becuase this rom has holo launcher as default??or cm7 themes doesnt change icons anyway?? Please help... one more question is that i had made a nandroid backup now i want to use other rom like "http://forum.xda-developers.com/showthread.php?t=1810499" so can i just install the rom and then restore my nandroid backup???will all my apps ,contatcs,messages will be there??
