Is there any way to backup protected apps without rooting my HTC One?

without root, you can't backup the app data. So you may as well just download the apk from internet and save it, than backing up the app.
PHONE:HTC One , S-OFF, ARHD 61.1 & teaMSeven performance kernel
Device History

Nokia 1100(The undead)
Sony Ericsson K750i(Meh)
Nokia 5220(Killed in action)
HTC Explorer aka Pico(retired)

That's not actually true. But the OP wants to back up protected app data, and that simply cannot be done.
If I helped, click Thanks!
