Quick, simple question!

So: if I unlock the BL and flash CM11, then (if needed) go back to the stock rom and lock the BL, will I receive OTA updates straight from Moto like nothing happened?

Yes you will. And it's not necessary to lock BL. You are still able to get ota with unlocked BL.
the following things deny ota:
Custom recovery (cwm, twrp etc$
Any patches or mods you flashed through recovery
Deleting or changing system files
