Remove the "BETA" from WM6 homescreen on The Dash

Navigate with your registry editor to:

HKEY_LOCAL_MACHINE -> Software -> Microsoft -> Shell -> DeviceBeta

Clear the Value data for both "About" and "Today". Seemed to work great for me. Was bugging the heck out of me.

i'm also interested in knwoing if the french keyboard is supported, haddn't thought about this point.

It supports all of the symbols yes. I have no idea how to even check the French layout.
