Default Backlight issue.

So, I tether my Kaiser all the time, and the only downside is that the back light always goes dim instead of totally off when it is connected to my pc.

When I press the off key on the side to turn the back light off, it disconnects from my phone.

Is there something I am missing to get this to go off?

It sounds like when your screen shuts off, the phone goes into sleep mode, which disables the tethered connection. If you are charging while tethered, then I wouldn't worry about it. You can also set your backlight to turn off after X amount of time but like I said, it will go into sleep mode.

When the Kaiser is connected to the PC, it will not turn off the screen, instead only dim it as you stated. There are several programs for Windows Mobile that will allow you to shut off your screen completely without actually sleeping the device. Check out this post.
