Default HTC touch - Upgrading to cooked ROM

Hi - New member here.

Is there a guide describing how to prepare for a cooked ROM upgrade ?
Also is there something which describes the functionality of the most popular ROMs ?

I am keen to take the plunge, but can only find threads in which experts discuss things.
