Any recommendations on good headphones? Are there any usb headphones out there or will it have to be bluetooth?

You can use an adapter and regular headphones of course... the adapters are cheap on ebay.

I'm not too sure which BT headphones are good

Be careful with the adapter headphones - they've been known to ruin the usb-mini ports - and making your phone unchargable.

I confirm (my ex-HTC Touch died because of this).
I think that using a desktop cradle with the phone in vibrate mode can ruin the mini-usb port too.
HTC Google Nexus One (Rogers/AT&T)
HTC Magic (Rogers - V32A)
HTC Dream (Rogers - stock ROM)
HTC Touch XL (P3452) + HTC E100
SPV C600 - Tornado => WM6
