On my Defy I use a Philips SHB9001 BT stereo headset with mic. Cannot put links here, but check on f.e. alatest.de.

Last week I got the Motorola S805 which is now discontinued, but some places still have them in stock at clearance prices. The sound is good for music and phone calls. It's a little bright and the maximum volume is OK but not ear shattering. However, the reception range and pairing reliability are excellent. The only time the connection drops is if I'm far away from the phone, well over 10 meters, even in a house filled with devices working at 2.4Ghz. The controls are logical and intuitive too.

Ouch these things are pretty expensive.. looked for that Sony Ericsson HBH 200 on amazon and it's 25 quid! Does look great though. Should I expect to pay around this price for use of a bluetooth headset?

Depends on what you expect. I bought the HBH 200 for around 40€ and in my opinion it's worth every cent. I can use the headset with every Bluetooth-Audio compatible device ... computer, PS3 (Voicechat), TV.

the huge advantage of the HBH 200 (and similar devices) is, that you can change the headphones to nearly everthing with 3.5mm ... although i have never tried it with a pair of bigger headphones, because i always use inears.

battery lasts around 5h.

Just got Dacom DA-D1 and found it's awesome. This is stereo bluetooth with oled dispaly. It looks as black as defy, manufacturer not shamed place it's name on device and specs are really pretty. I've got it just today and can really say it works with defy on distances about 7-8 meters through 2 solid-made walls ). Really good results, even awesome for device price (got it ~27$ with delivery on ebay). You can find it querying "bluetooth oled", "da-d1" on ebay, also visually searching "stereo bluetooth" around 26-36$. And also, it charges from any standart usb port, so it could be charged about anywhere - charger cable looks the same as "3.5mm to USB ipod"). And also, btw, it's could be _really_ loud, i've tryed listen audiobook @metro - could not hear anything with standart 3.5 headset in standart 3.5 jack, i guess this headset plays ~1.5 times louder.

some pics, just grab them from same ebay lot page:
