Does anyone know how we can install the G2 or the Flex Weather and Clock app?

XWidget in the playstore has it.

I liked the G2 clock and its animation. Do you think I can get the APK and push it into the system/app with root explorer and not brick my phone?

Well it wont brick your phone thats for sure, but it might keep it from booting. The weather stuff is actually multiple apks. I doubt it will work. Make yourself two flashable zips one to flash those apks and one to flash the originals back if it doesn't work or boot. Thats how I would do it.

I only found the apks for them. How do you make it a flashable zip? I previously tried using an app not originally for the G3 (milk music). I changed the buld.prop as stated and it rendered my device unusable. It was not even able to go back to stock and luckily I was able to exchange that phone. I figured that was what bricking the phone was.
