[discontinued][ROM][unlocked][ford,austin] Lineage-12.1 [05 MAY 2020]

Appears full/mini/micro have been discontinued for arm/5.1. I would go with nano then add individual Google properties from the Play Store as needed.

I installed lineage and nano gapps with flashfire v58. Lineage appears to work fine but play store is nowhere to be seen (which was also the same outcome with Fire Nexus). Any ideas?

I had the same problem. My solution :
1. Back to 5.3.1 (adb sideload)
2. Root
3. Flashfire only lineage (wipe + lineage)
4. Boot lineage
5. Flashfire only gapps (not wipe, gapps only)

Lineage recommends installing GAaps concurrent with ROM. As for Nexus comparison both are mature and feature complete. Really depends what you are looking for. If uncertain go with Lineage.

I have identified one of my old Fire tablets of the 5th generation with updates disabled and wanted to install LineageOS on it now.
The bootloader is an old 5.0.1 bootloader identified using the method here:
UBOOT
54 3f 06 00 5.2.2_055120 5.0.1

TEE1
00 3c 10 00 5.2.2_055120 5.0.1

Flashed using fastboot to boot into the TWRP recovery and then flash the ROM ... after that had to flash gapps (open_gapps-arm-5.1-nano-20180827.zip) and wipe dalvik/cache.

Still hoping for a 5.3.2.1 root method ;)
