How long does it take to full wipe, install new rom and restore apps+data?

Flashed it with what?. If you flashed back to stock you need to do this as if from the start:

Flash stock rom via odin.
DO NOT ALLOW IT TO BOOT TO OS. IF IT DOES PULL THE BATTERY IMMEDIATELY!!.
Boot to recovery.
Factory reset.
Boot to download mode.
Flash stock via Odin again and allow the device to do its thing and reboot to OS. (this second flash is what overwrites the files that couldn't be overwritten in the first flash).
