G975W Variant It seems the G975W variant can't be rooted, modded or really altered in any meaningful way. Is the G975W a useless POS or are all S10+ devices nerfed in this way?

That's a big no on that. Barely had things working on Oreo and now that Pie is being OTA'd I think it could be a while. Best stick with Oreo for now - if you can.
