I had the same problem. I could use adb to open a shell on the xoom once the encrypt access password had been entered, but the xoom itself would not get past the boot animation. I eventually had to 'fastboot erase userdata' to clear the encryption out. This erases entire /data directory, so...

Yep, encrypting your tablet does screw things up. After poking around for a while I finally had to 'fastboot erase userdata' to get rid of the encrypted data partition and start from there. Wiped everything again and this time got the proper confirmation message from wipe dalvik cache...
