It's a hit and miss actually IMO. I found CarbonROM to be pretty stable for me. You just have to try i guess, because finding a "truly, perfectly stable" ROM is impossible. Every ROM has its ups and downs, so does with the bugs and stability. Choose which ROM suits you best, and try them for...
