as far as I have experienced the customisations are present for country specific models.. you must flash ftf belonging to your country only..

Yes it can easily be done by flashtool.. And some other options are pc companion and emma.. If you have unlocked your bootloader then you cant ever update phone through emma or pc companion.. But if your boot loader is locked then after flashing stock firmware you are free to update your phone...
