You dont have to worry about it, the nexus 7 works great on stock, and you can update it without having to fastboot anything. Just give it a go, you wont be dissapointed. You can check some youtube videos about its performance, its definitively worth it.

Do the original fastboot files come with the stock kernel? Or is there another way to get it and flash it?

The nexus 7 is a great device for gaming on android. Graphics are crystal clear and it has a great performance on heavy games like modern combat 4 (At least in my experience). Im not sure if you can use it as a phone, but both devices are up to kit kat now.
