I had this problem too. I had too many devices activated on my exchange account (max 10). It was from activating it on two devices multiple times.... So you may want to check that

I just tried the iPhone headphones out with a stock phone and they do not work. So I guess your device is fine, you will just have to wait for root and your headphones will work once you have a custom rom!

Did you delete your old APN before restoring the one downloaded from the post? That was my problem at first.
