GAPPS stands for Google Apps... That includes stuff like the gmail app, google maps, google goggles, etc.
you can find some of these apps on the market, but not necessarily all of them. (I couldn't download gmail from the market)

no, but this is what you'll need to do:
I don't think the stingray is gsm compatible. You'd need a MZ601* (everest) to use it w/ an ATT sim.
* there are other model numbers for the everest-xoom but I am not positive which... (not MZ600, 602, 604)
depends on where your desktop is;) If it is in ~/Desktop/, then the correct command should be
fastboot flash recovery ~/Desktop/recovery-Tiamat-R4c-100611-1150-cwm.img
