7-zip.org Install, then right click on the zip file -> open, then in 7zip right click on system.img -> open internally or however it's called in English. Then you should see the folders.

You can open these .img files with 7zip. And in the system.img file are the app and priv-app folders. From there you can grab those apps you need.

Yeah here's one: http://en.miui.com/thread-210071-1-1.html It's an 5.0.2 AOSP ROM and can be flashed on locked bootloader. Fingerprint sensor is working too. If you have an unlocked bootloader, there are many more non-miui roms.

It's important to untick "preloader" too ! When you don't do that, there's a risk, that your device bricks. You always have to do that when you flash non-stock things with SP-Flashtool. Btw. What's with custom roms for the Redmi Note 3 ? They should be in your first post too...
