Nop it wont break your s-off, actually you need s-off to be able to flash a new recovery... the only way u can break it is by changing the bootloader which is done by unrooting, re-rooting or flashing a stock rom (esprimg.zip) so yeah, flash it and try it dont worry ;)

That "move to sd" thing uses the regular fat32 format of your sdcard, like when you put any mp3 file in there... it just puts the app in your sdcard (this is apps2sd) and it makes your phone lag, apps would take a lot of time to load... in the other hand app2ext is way faster but you need to...
