Give the phone to SC and ask them to do the necessary things as they suggested.

Flash stock nougat ROM using fastboot method of June update and then relock BL and them check for updates. Look for tutorial on YouTube how to do that.

From TWRP recovery, Boot into TWRP -> Backup -> Select efs portion -> Swipe to backup

You don't flash efs, you restore it from TWRP

Is your network Volte? Did you took backup after installing TWRP, if you have backup of efs and persist, most likely you'll get back your Volte on restoring.

This time you got it fine, but there's no guarantee you'll get all the soak test zips. So there's some hiccups might be there. Be cautious, official rollout is not far.

Well that's a myth. Every custom ROM becomes slow after few months or weeks of use unless you've a hefty of RAM. The closest to stock i heard is Pixel Experience.
