You're correct, it's not something you need to worry about. The only issue with KNOX is that when you root the tab then KNOX will be irrevocably tripped. This may affect your warranty, though most reports I've heard is that it doesn't. If your company isn't using it you don't need it.

TB backs up app data only up to 100mb by default. If app data is over 100mb it doesn't backup at all. You can change this in the settings to whatever size you want.

AOKP ROM usually has this as an option (not sure if it's in there yet--they're still on build 1, officially).

Try Handbrake. I don't watch videos on my tablet, but Handbrake is a good and it's both free and open source, and I've used it in the past. Search their forum for what settings to use.

When I use mine with a thumb drive, I just transfer the files to the tablet. Takes 5 minutes and uses a lot less battery than having it connected to usb and reading the card the whole time. Just leave a few GB available for movies; delete one if you need more space to transfer another.
