Just installed the new 20170117 version for T800.
I noticed that now in Developer Options, there only "ADB only" and "Disabled" choices for Root Access. The "Apps and ADB" option disappeared. Now we don't have root for apps, unless you install SuperSU..

You can only dirty flash if you are upgrading from an earlier MM RR Rom.
But since you are not, you'll have to do a full wipe (clean install) before going back to MM RR...

The display is just inverted and flipped, but everything else still works.
You should be able to copy the last working nightly (7/11) to your phone via MTP. (You have to change the USB mode to MTP manually, since the default is Charge only, but it's not hard even with the inverted and flipped...

I find that hard to believe, because the update batch file (quark_verizon-user_LCF23.80_release-keys_firmware_upgrade.bat) is the same as every other, it flashes radio, boot, bootloader, logo and recovery using fastboot..
Well... I was finally able to extract the build.prop from the quark_verizon-user_LCF23.80_release-keys_firmware_upgrade_SVC.xml.zip file by rebuilding the system sparsechunk files.
I was only able to extract the content in Windows using ImgExtractor_1_3_4.

The only way you can flash a .zip file is to use a custom recovery, such as TWRP, which we don't have because of the locked bootloader.
Now, you can try to do what the .zip file does by looking at the script inside and manipulate the .img
However, that's probably something you wouldn't know how...
I have both Ubuntu and Windows here at work, and I've been trying to modify Android .img files without much success using Windows.
The problem is that those .img files are in EXT4 filesystem, which Windows doesn't support natively.
There some EXT4 utilities for Windows, but I haven't really had...

You mount the old (latest full image without the update) image in Linux, then unzip the update.zip then copy and replace everything in the .zip file to the mounted image.

I just re-downloaded my copy of mofo today through the same link I was given and the .zip is clearly different than ver 0.0.2.
