Same problem with all custom roms (Android 11 - 12) on Redmi Note 7. I get always bootloop when formatting the SD Card, and when it doesn't bootloop eventually after some days I lose all data for corruption. I always have to return to Android 10 :c

Exactly. Wipe, Format, Flash MIUI (if you haven't the last) and then flash Arrow OS. Only at the end of this you can reboot in Arrow OS.

Wipe Data and Cache, then use the Format Data function from the recovery (it's essential this part). Then you can flash Arrow OS.
