Los 16 by darshan is your best bet if you want to use your device with encryption. All works fine.

You flashed los. Your device is encrypted. Flash any other twrp version other than your current version.

Its not only the chipset that matters for custom ROMs. Learn more about custom ROMs. You don't even know the basics. Edit: Sorry. I didn't mean to be rude or anything. But such mistakes can brick the device. It's better to know more about custom ROMs before such an attempt.

The encryption can be removed. You can flash the ROM. Don't worry. You can remove encryption by formatting data under wipe section. For now, flash this ROM and enjoy. If you want help decryption, pm me.

That's easy. Which twrp are you using? The one provided in the OP or official twrp? If official, then flash the one provided in the OP and vice versa. You will be able to mount and access all partitions after that.

In pie ROMs, when you flash magisk, the magisk icon won't be in the app drawer. You have to install magisk manager APK separately.

The problem in ota should be fixed given the updated twrp. The other problems is due to the fact that people don't know how to handle encryption. There's no fault with the developers work.

Just reflash the recovery. You won't face decryption screen and all partitions can be mounted.

Try replacing thermal config file with that of miui.

I've seen reports of users facing the same issue when using stock gapps on pie. The same has been rectified when they used gapps below micro.

Don't use stock gapps. Try anything between micro and pico. I use pico and I have no issues.
